Take a look at the Islands fishery in mere, Warminster.
There are 2 lakes. One of which has 2 lodges. One at each end of the lake, divided by an island i in the middle.

If it doesn't have to 'do' mega carp, Headlands Farm have some nice lodges and you fish from the platform out the back.

It's in the New Forest, so beautiful countryside all around too 👍
