I’ve just took some out of the shed to use that I’ve had in there for 8/9 months, like you said wipe the scum off the top and the side of the bucket every couple of weeks and they are absolutely fine. I also add a big glug of honey after they are cooked and cooled down and seems to preserve them really well.

Keep them in the tubs with the lids on in a cool place. Don't need to freeze them, let them get really funky and use as you need.

Every so often check in on them, remove the scum, give them a shake and close the lid again. I think Gareth Fareham calls it tiger hygiene so it's probably on the internet somewhere 👌.

After the initial soaking process of Tiger nuts, then cooking and leaving to ferment.until there gloopy.
If I'm not using them straight away, can I freeze them in there gloopy state.
