Acids or alcohols create a ph shift in the water column which can attract fish to the source.

My experience was exactly the same with no noticable difference in catch rates, I also had the liquid that's still festering in my fridge and has gone through a stage of puffing out the bottle and has now reversed and is full of bubbles.

Yes it’s the increase in acidity that aids the digestion.

In the PeteB mix the Citric acid was there to raise the acidity of the mix and the chilli powder to help them digest it.

For acidity, the powder.. Greater surface area than the flakes. Chilli oil isn't really as named, more chilli infused veg oil. Powder is the best.

What would be the better variant though for this, chilli flakes/powder or oil? Would either have certain benefits over the other?

Blimey is Dean back in business? Used to love that bait, had some of my best years using it when it was a little hush hush

Best bit was letting people try and then seeing their faces turn purple red from the cayenne pepper 😂

Just to try and put a fair balance on the bait i did use the enzyme bait back in the mid 2000's and found it a very good bait better in my opinion than any other boiled bait i have ever used. I have also used the enzyme bait again this autumn with a lot of success and was doing very well on a water until the tier system stopped me in my tracks.
